Begin by toasting a slice of whole-grain bread to your desired crispness. Spread the creamy avocado evenly on top, adding a pinch of salt and pepper to enhance the flavour. Place a poached or fried egg on the avocado, allowing the yolk to remain slightly runny for extra richness. For an added kick, sprinkle some chilli flakes or squeeze a touch of lemon over the dish. This quick, nutritious meal is perfect for breakfast, brunch, or a light snack.

Ingredients

1 slice of whole-grain bread 1 ripe avocado 1 egg (poached or fried) Salt and pepper to taste Optional: chilli flakes or a squeeze of lemon

Preparation

Prepare the Toast: Toast the slice of bread until golden and crisp. Mash the Avocado: Scoop out the avocado flesh into a bowl. Mash it with a fork until smooth. Add a pinch of salt and pepper. Cook the Egg: Poach or fry the egg to your liking. Assemble: Spread the mashed avocado evenly on the toast. Place the egg on top.
