Ingredients 2 chicken breasts, sliced into thin strips 1 tbsp olive oil 1 red bell pepper, sliced 1 green bell pepper, sliced 1 medium carrot, julienned 1 small broccoli head, cut into florets 2 garlic cloves, minced 2 tbsp soy sauce (low sodium, if preferred) 1 tsp sesame oil (optional) 1 tsp honey (optional) Salt and black pepper to tastePreparation
Prepare the Chicken: Heat olive oil in a large frying pan or wok over medium-high heat. Add the chicken strips and cook for 5-7 minutes, stirring frequently, until fully cooked and golden. Remove the chicken from the pan and set aside. Cook the Vegetables: In the same pan, add a little more olive oil if needed. Add the garlic and cook for 30 seconds until fragrant. Add the carrot, bell peppers, and broccoli. Stir-fry for 5-6 minutes or until the vegetables are tender but still slightly crisp. Combine and Flavour: Return the cooked chicken to the pan. Add soy sauce, sesame oil, and honey if using. Mix well to coat the chicken and vegetables evenly. Season with salt and pepper to taste.
