These fluffy blueberry pancakes are bursting with fresh berries and perfect for a delicious breakfast or brunch. Quick and easy to make, they’re light, sweet, and wonderfully satisfying. Serve with maple syrup for an extra treat!

Ingredients

  • 200g all-purpose flour
  • 1 tbsp baking powder
  • 1 tbsp sugar
  • 1/2 tsp salt
  • 1 egg
  • 250ml milk
  • 2 tbsp melted butter
  • 100g fresh blueberries
  • Butter or oil for cooking

Preparation

  • In a bowl, whisk together the flour, baking powder, sugar, and salt.
  • In another bowl, beat the egg and mix in the milk and melted butter.
  • Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix – it’s okay if the batter is a little lumpy.
  • Fold in the fresh blueberries.
  • Heat a non-stick pan or griddle over medium heat and lightly grease with butter or oil. Pour small amounts of batter onto the pan, forming pancakes. Cook for 2-3 minutes on each side, until golden brown.
  • Serve hot with extra blueberries and a drizzle of maple syrup.
