This creamy pumpkin soup is smooth, comforting, and perfect for chilly days. With a hint of sweetness from the pumpkin and warmth from the spices, it’s a simple yet flavourful dish that's easy to prepare and ideal for a light meal or starter.

Ingredients

  • 500g pumpkin, peeled and chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 750ml vegetable broth
  • 1 tbsp olive oil
  • 100ml cream
  • Salt and pepper to taste
  • Preparation

  • In a large pot, heat the olive oil over medium heat. Add the onion and garlic, sautéing until softened.
  • Add the chopped pumpkin to the pot and stir for a few minutes. Pour in the vegetable broth and bring to a simmer. Cook for 15–20 minutes, or until the pumpkin is tender.
  • Use an immersion blender to puree the soup until smooth, or transfer to a blender in batches.
  • Stir in the cream, and season with salt and pepper to taste. Simmer for an additional 5 minutes.
  • Serve hot, garnished with a drizzle of cream or some fresh herbs if desired.
