This light and flavourful lemon & pea rice is a quick and easy side dish, perfect to pair with grilled meats, fish, or a vegetarian main. The fresh lemon zest adds a citrusy touch, while the peas bring sweetness and colour. Ready in just a few steps, this dish is simple yet delicious.

Ingredients

  • 1 cup of rice
  • ½ cup of peas (fresh or frozen)
  • 1 lemon (zest and juice)
  • 2 cups of water or vegetable stock
  • 1 tablespoon of olive oil or butter
  • Salt and pepper to taste
  • Preparation

  • In a pan, heat the olive oil (or butter) over medium heat. Add the rice and stir for 1-2 minutes.
  • Pour in the water or vegetable stock, add a pinch of salt, and bring to a boil. Cover and cook on low heat for about 10 minutes.
  • Add the peas, cover again, and cook for another 5 minutes, or until the rice is tender.
  • Remove from heat, fluff the rice with a fork, then stir in the lemon zest and juice. Season with salt and pepper to taste.
  • Serve warm and enjoy!
